Have you tried "Compact QWERTY" setting?
Open some program like email or web browser so you can show on-screen keyboard.. In portrait view press the on-screen key that looks like a gear on the bottom left of the on-screen keyboard. Then choose keyboard type.. QWERTY / Compact QWERTY / or even Phone Keypad. Also when typing words with hypens.. don't manually type the hypen.. only type the letters.. auto-complete will add the hypen for you.

Another trick is when in Compact QWERTY (or Phone Mode) keyboard: click the # button, then go to screen 3 of 4 (3/4) to add smileys easily.

Have you tried using the calibration tool in the keyboard settings? I'm not sure if my keyboard is the same as the Desire's but I don't have the problems your describing with the auto complete. I don't have to press the word prediction button usually. As I type it shows a few predictions, the more I type the closer it gets to the word I want, when it highlights the word I need i just press space and it completes the word. Or if it doesn't predict the word I need I just keep typing till I've typed the whole word. For me it doesn't change it if it doesn't know what word I'm typing. I'm using the Full Qwerty view.

Which keyboard were you using originally? Is there an HTC keyboard that is different from the regular Android keyboard?

Phones like My HTC Eris with only on-screen virtual keyboards give you the extra portrait view keyboard layouts:
"Compact QWERTY / Phone Keypad" I know that the Motorola Droid for instance doesn't have the Compact QWERTY option. Not sure if it's is a HTC thing or if other Android phones with on-screen only virtual keyboards have same options.

You will also find the Calibration tool within "Text input" (that Jeremiah mentioned above) on the same screen the "Tutorial" option is found.
