To transfer contacts to the external memory card, click on settings while in contacts, then click on import and select "import to SD card."

For photos...first off, in the camera settings, make sure that your sd card storage is the default choice for the future. Then you can use your usb cord to plug into your computer and transfer from the phone storage DCIM folder to the SD card.

To manage all of these, you can also use a file manager like Astro, Estrongs or Linda from the Market.

Apps can be used using the application App2SD.

Also, if you are trying to delete junk, an app like ES File Explorer can help you figure out whats using the most memory. Once installed, open it then hit Menu -> Settings -> File Settings -> Show Hidden Files. Hit back until you're at the screen where you can see all your files and folders. Then hit Menu -> Manager -> SD Card analyst. That will give you a view of what folders are taking up the most space.
