Hi,
On my previous phone, each message I got in WhatsApp would appear as a separate notification. How do I have Android behave the same? Right now, each message I get gets added to one notification I see - I want separate ones.

I'm afraid that this is not possible, unless you root your phone and use XPosed Framework.
