I gave my simcard to someone else, to my father to be exact and I am using my phone with another simcard but my viber seems to be still bond to my old number, will the other phone that has my old sim card and viber recive the same messages that I do, actually what determines which account is which ?

Hello Toni, welcome to AndroidPIT!
It always depends on the Sim card you activated the app with. The number is only used to activate the account and therefor send the code. After the first registration, the number is not used to transfer messages etc.
So, if your dad activated Viber with a different number he should be fine and so should you
